Château Pavie is one of the finest wine producing estates in St-Émilion. The 2008 is a blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon and boasts a gloriously concentrated, inky fruit profile with nuances of graphite, forest floor and liquorice.

The 2008 Pavie has a sweet, candied bouquet with high-toned, glossy black cherry and crème de cassis fruit that rather betrays the exceptional terroir. The palate is very ripe and concentrated with intense black fruit, almost viscous in texture with a concentrated finish that just feels more like winemaking intent than terroir for me. I think Gérard Perse and his team are crafting far better Pavies today. (Tasted at BI Wine & Spirits annual 10-Year On tasting.)Neal Martin1st February 2018

70% Merlot, 20% Cabernet Franc, 10% Cabernet Sauvignon. Only 65% new oak this year. Harvested last week in Oct to 2 Nov.Inky with barely a rim. Dark and firm, dry but with more freshness and the tannins a little more melted than in previous vintages. Gerard Perse described as `more feminine` than in the last few years, though I think he must like his women to have worked out! Lovely dark fruit. Roasted but not cooked. Dark and intense but much more. Savoury and concentrated but not the bitterness of some previous vintages. (JH)

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
