Château Pavie is one of the finest wine producing estates in St-Émilion. A monumental wine and undoubtedly one of the best the château has ever produced. Dark, intense, ruby-red colour, a very fresh nose, with lots of very ripe, juicy berry fruit as well as refined toasty notes. The 2000 vintage shows us that a strong oak influence marries very well with Pavie`s fruit in full-bodied vintages. 2000 Pavie is very smooth and suave on the palate with a great balance between tannin and acidity. The mouthfeel is wonderfully velvety. Concluding on a long and spicy finish, with a hint of cocoa.

The medium to full-bodied palate is an exercise in grace and suppleness, featuring exquisitely ripe, silky tannins and seamless freshness to frame the achingly perfumed fruit, finishing so, so long and so, so fragrant. The 2000 Pavie was tasted on two occasions. The first was from bottle at the château, where I felt it was quite sauvage and displayed more brettanomyces than I remembered. It was a peculiar showing. Then I tasted a magnum back in the UK, and this chimed more with previous bottles. Blackberry and crème de cassis feature on the nose, which is precocious and modern in style, though the new oak that once dominated this Saint-Émilion is now subsumed. The palate is full-bodied and dense, yet it does possess an alluring, silky texture. A sweet, precocious finish lingers extremely long in the mouth. Neal Martin1st September 2021

Delicious gravel, meat, cooked black fruit and cocoa. Properly mature, but still with primary fruit, and there is delicious extended length with plenty of earthy complexity. Powerful, but with the soft-focus of time that has given nuance and integration. (RH)

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
