Ermitage Le Pavillon Chapoutier 2000 embodies a refined expression of the Hermitage terroir. This vintage is best approached after several years of cellaring, with optimal drinking anticipated from 2026 to 2040.

Year in and year out, one of the three greatest Hermitages made is Chapoutier’s Le Pavillon. The black/blue-colored 2000 Ermitage Le Pavillon is brilliant out of bottle. Notes of graphite, ink, licorice, creme de cassis, and minerals jump from the glass of this syrup of Hermitage. Full-bodied, unctuously-textured, gorgeously rich, spectacularly concentrated and long, it is a tour de force in winemaking. Anticipated maturity. 2007-2040. These uncompromising offerings from a young genius are not meant for consumers who want something to drink immediately. They are the essence of bio-dynamically farmed vineyard sites cropped incredibly low, given extended fermentations with indigenous yeasts, and rarely touched until they go into the bottle unfined and unfiltered. In most vintages, the wines are not even racked off their lees, which only adds to their natural style. These are truly remarkable wines, but for most readers, patience is the operative rule as they generally need a good 8-10 years to strut their stuff. - Robert M. Parker, Jr.

One of the oldest producers in the Rhône Valley, M. Chapoutier was established in 1808. The arrival of a young Michel Chapoutier, who took over management of the family domaine in 1990, saw huge changes and a renewed drive for excellence, focussing especially on the diverse terroir of the Rhône. Michel has embraced biodynamic practices in recent years and attributes much of the increase in quality to this approach. The wines are generous and fruit-forward at the entry level, moving towards the sublime as we move up the quality ladder.

Two of the greatest wines in the portfolio are 'De L'Orée', an Hermitage Blanc made from 100% Marsanne and 'Le Pavillon', a full-bodied, expressive Hermitage rouge that effortlessly rubs shoulders with the world's greatest Syrah.
