Chichibu Chibidaru 2009 Cask 707 is a single malt Japanese whisky from the Saitama prefecture. The term Chibidaru refers to quarter casks which provide a high wood-to-liquid ratio for accelerated maturation. Distilled in 2009 for the Isetan department store, this release offers a profile of honeyed malt, vanilla and orchard fruits. Small-cask maturation has imparted significant structural depth and notes of toasted oak. The palate is vibrant and spicy, reflecting the craft-focused approach of founder Ichiro Akuto and the rapid development of flavour in these smaller vessels.

Chichibu Distillery is a Japanese whisky distillery located in the small town of Chichibu, northwest of Tokyo. Established in 2004 by Ichiro Akuto, it is a relatively young distillery in the world of whisky-making, but has quickly gained a reputation for producing some of the finest single malt whiskies in Japan. Chichibu's whisky-making process is steeped in tradition and attention to detail. The distillery sources only the highest quality malted barley from around the world, and uses a combination of pot stills and column stills to distill the whisky.
