Ermitage Le Pavillon Chapoutier 1999 is a mature single-vineyard red wine from the northern Rhône Valley represents a meticulous approach to winemaking, sourced from a select plot of old vines, averaging 65 years. The vineyard`s distinct geology, characterised by a thin sedimentary layer atop granite, imparts subtle complexity to the fruit. The grapes undergo manual harvesting at peak ripeness, followed by full destemming and fermentation in concrete vats, ensuring careful extraction through regular punch-downs. This single-vineyard wine is aged for 18 to 20 months in oak barrels, with approximately 30% being new. Chapoutier is renowned for championing biodynamic practices in wine production.
