This Chablis comes from the Séchet vineyard, which is a Premier Cru site. Dauvissat is known for their traditional winemaking approach, often using old oak barrels for fermentation and aging, which contributes to the complexity and character of their wines. The 2007 vintage in Chablis was marked by challenging weather conditions, but producers who managed their vineyards carefully were able to produce wines with good acidity and balance. As a result, the Chablis Sechet 2007 from Vincent Dauvissat displays classic Chablis characteristics, such as bright acidity, minerality and flavours of citrus, green apple and wet stone.

Bright yellow. Highly nuanced nose offers pineapple, lavender, beeswax, minerals and licorice. Densely packed, minerally and penetrating; more taut than the Vaillons but with a creamy core.
