Chablis Butteaux 2003 from Domaine François Raveneau is a mature Chablis from the Butteaux parcel of the Montmains Premier Cru, known for its Kimmeridgian limestone soils that typically yield wines of great tension and longevity. In 2003, the extreme heat resulted in a Chardonnay with unprecedented richness and lower acidity, though Raveneau’s signature use of old oak feuilletes and meticulous viticulture preserved the wine’s balance. The profile is now fully mature, offering notes of beeswax, lemon confit and a distinct smoky minerality. Despite the atypical ripeness of the year, it retains a saline finish and a textural density that is characteristic of the estate.

Vinous
Pale yellow. Pure aromas of lemon, spices and stone. Supple, round and silky, with very ripe but bright flavors of apple, pear and citrus fruits. Impressively fat, rich and seamless premier cru with excellent length. This was bottled the day before I tasted it but was not yet showing any evidence of shock.Stephen Tanzer1st July 2005
