Domaine William Fèvre is a leading producer in Chablis and is one of the biggest landowners with 78 hectares of prestigious vineyards, including significant holdings in many Premiers Crus and in six of the seven Grands Crus. Vinification remains incredibly traditional with fermentation and maturation on fine lees undertaken in a combination of stainless and seasoned oak (ave. 6 years old).

Côte Bouguerots is a steeply-sloping lieu-dit within Grand Cru Bougros that usually produces complex and highly mineral wines with ample power and density but appealing roundness. The 2017 is a superb release from a high-quality vintage and, whilst it will drink well young, it should cellar for at least a decade or more.

The 2017 Chablis Bougros Côte Bouguerots Grand Cru has a gentle, lilting apple blossom bouquet, quite simple for a Grand Cru. The palate is well balanced with crisp acidity, taut and linear, with green apple and citrus peel toward the edgy finish. Understated, but a classy number, though it does miss a little nervosité to those looking for it. Tasted blind at the annual Burgfest tasting in Savigny-lès-Beaune. Neal Martin1st August 2021

Tasted from bottle, the 2017 Chablis Grand Cru Bougros Côte Bouguerots is already quite open and expressive, bursting with aromas of fresh peaches, oatmeal and dried white flowers, with little trace of the reduction it showed from barrel. On the palate, the wine is medium to full-bodied, satiny but incisive, displaying good concentration and an impressive spine of tangy acidity, which lends superb cut and drive to the chalky finish.William Kelley30th April 2019

Chablis with exceptional terroir focus

Domaine William Fèvre, located in the prestigious Chablis region of Burgundy, has a legacy spanning over 250 years. Established in 1959, William Fèvre is one of the biggest landowners in Chablis, with just under 80 hectares of vineyards. Of these, 15.9 hectares are classified as Premier Cru, and 15.2 hectares as Grand Cru. The domaine boasts holdings in six out of the seven Grand Crus, with Les Clos as the flagship, producing profound white wine Chardonnay with great structure, mineral depth, and ageability.

The Fèvre family, led by the eponymous William Fèvre, established a reputation for fine wine production. The estate was sold to the Champagne house Joseph Henriot in 1998, but the legacy of the Fèvre family continues under the guidance of former Bouchard cellar master Didier Séguier. Under his management, William Fèvre has become a benchmark for terroir-focused Chablis, continuing the tradition started by William Fèvre's father.

Since 2000, the domaine has expanded its vineyard holdings while intensifying its commitment to sustainable farming practices. The estate has also embraced organic cultivation methods, with the entire 78 hectares estate becoming organic-certified in 2023. Careful oak management is central to William Fèvre’s terroir-driven style: Premier Cru wines are vinified in 40-50% French oak barrels; Grand Crus in 70-80%, without new wood.
