In 1972, Caymus Vineyards was founded by Chuck Wagner, along with his late parents, Lorna and Charlie Sr. They began their journey with a modest production of 240 cases of Cabernet Sauvignon. Fast forward to the present day, Caymus Vineyards continues to be a fully family-owned and operated venture, with the next generation now leading the charge in managing and crafting exceptional wines. “The 2007 Cabernet Sauvignon Special Selection (100% Cabernet Sauvignon, now bottled earlier than in the past) exhibits an inky/blue/purple color in addition to sweet aromas of cassis, graphite, licorice, tobacco leaf and toasty oak. (15.2% alcohol): Bright, full ruby. Very sexy nose combines blackberry, plum, mocha, graphite and black pepper, plus a suggestion of reduction. Very suave and fine-grained, showing an attractive restrained sweetness as well as a slightly wild aspect to its plum, dark berry and licorice flavors. The slight reductive quality carries through on the palate but this wonderfully silky wine blossomed dramatically with 24 hours in the recorked bottle to offer more pliant, exotic flavors of dark berries and chocolate. Finishes with ripe, dusty tannins and terrific length. A bit powerful in a 2007 way but finishes with excellent grip. This is probably not going to be a 30-year-wine but give it some aeration if you plan to open it anytime soon.
