The 1989 Bruno Paillard Vintage Assemblage is a distinguished Champagne from this esteemed house, which was founded in 1981 in Reims, France. This vintage is a blend of 60% Pinot Noir and 40% Chardonnay, sourced exclusively from Premier and Grand Cru vineyards. The wine underwent its first fermentation in stainless steel tanks, with approximately 25% vinified in oak barrels, followed by an extended period of ageing on the lees. After disgorgement, it rested further in the bottle to achieve optimal maturity. In the glass, it displays a deep golden hue, indicative of its age. The nose is complex, offering aromas of fresh pastry, coconut, roasted nuts, caramel, and hints of dried red fruits. On the palate, it is round and sensuous, with flavours of macerated cherries and savoury undertones, balanced by moderate acidity. The finish is long and harmonious, reflecting the wine`s maturity and the exceptional quality of the 1989 vintage.
