Crafted exclusively from Pinot Noir sourced from the family`s historic walled garden in the village of Mareuil-sur-Aÿ, the 2007 Le Clos St-Hilaire undergoes 100% vinification in oak and an extended ageing on lees for 14 years. This unique single cru Pinot Noir presents a generous texture complemented by hints of preserved citrus and ripe fruits, culminating in a distinct chalky minerality. Limited to just 4800 bottles.

Disgorged in the second quarter of 2023, the 2007 Brut Le Clos Saint-Hilaire displays its charm, evoking a refined and pure bouquet of ripe orchard fruits, mint, white pepper, licorice and jasmine. Medium-bodied and taut, the palate is marked by crystalline precision and a vinous, delicate texture that segues into a saline, subtly bitter finish that complements its gastronomic profile. This vintage beautifully expresses the distinguished calcareous terroir of Mareuil-sur-Aÿ, making it a refined and appealing Champagne with a dosage of two grams per liter. From the one-hectare plot of old Pinot Noir vines planted in 1964 in effectively the back yard of the Billecart-Salmon HQ in Mareuil-sur-Aÿ. Officially certified organic in 2022 and biodynamically managed since spring 2023. The Blanc de Noirs was vinified in oak casks aged between 15 and 20 years. Very pale amber. Extremely fine bead. Nose of minerals and very ripe, round greengage fruit. Already a well-married drink even if not the most ample finish but this is likely to be the finest 2007 Blanc de Noirs you’ll encounter.(JR)
