Whisky Casks

Ardmore Distillery, founded in 1898 in the Highlands of Scotland, is known for producing a distinctive lightly peated single malt whisky. Traditionally using Highland peat, Ardmore’s spirit balances gentle smokiness with a malty sweetness, making it a unique offering in the region.

Distilled at Ardmore in February 2025, this new make spirit has been filled into a sherry butt for maturation. With a filling strength of 63.5% ABV, the spirit is set to develop rich complexity under the influence of sherry-seasoned oak. The cask’s impact will enhance the whisky’s character over time, adding depth and richness to its evolving profile. Lightly peated (around 12-14 ppm), the new make spirit offers a balanced combination of sweetness and gentle smokiness. On the nose, fresh malted barley and orchard fruits mingle with soft phenolic notes. The palate presents sweet cereal and crisp apple, complemented by a delicate wisp of peat smoke. A clean finish lingers with malty sweetness and a subtle smoky edge, promising an elegant maturation journey.

The cask was filled on the 18th February 2025. At the time of filling, the cask was estimated to yield approximately 736 bottles. Included in the price is three years professional storage and insurance at Braeside Bond.
