Notes of toasted biscuits and a touch of apple tart sweetness are carried by a soft creaminess, already hinting at the quality to come. As it matures, the first-fill bourbon casks should add vanilla, toasted coconut, a light sweetness, and gentle spice. Witchmark’s new make spirit is filled into cask at 65% strength.
