Transparent Billing and Rate Calculations

Annual Billing: Clients are invoiced annually based on the wines stored in the preceding year.
Case Equivalents: A case is defined as 9 litres of wine (typically twelve 750ml bottles), ensuring clarity in pricing.
Pro-Rata Charges: Storage fees are charged on a per-bottle basis, and wines stored for part of a month will be billed accordingly.

How to Use Our Bonded Storage

Purchase en primeur or under-bond wines from Hedonism Wines.
Automatically enjoy twelve months of free storage at our bonded storage when you open your storage account.
After twelve months, your storage will continue at the rates outlined above, with quarterly invoicing.
When you are ready to receive your wines, simply request delivery. Most orders are fulfilled within 3-4 working days.

Domaine Dujac Vosne-Romanée Les Beaux Monts 2011 is a 1er Cru Burgundy Pinot Noir from the Côte de Nuits. The climat of Les Beaux Monts lies above Echézeaux Grand Cru, with a small section crossing the boundary into Echézeaux itself. Dujac is one of the most celebrated names in Burgundy. Domaine Dujac was founded in 1968 by Jacques Seysses, who learned his craft from such Burgundy winemaking luminaries as Aubert de Villaine at Domaine de la Romanée-Conti and Charles Rousseau of Domaine Armand Rousseau. Dujac Pinot Noirs are typically made with wholebunch fermentation, although current winemaker Jeremy Seysses prefers to include destemmed grapes if he feels there is any deficiency in ripeness. The 2011 Dujac Les Beaux Monts was aged in 75% new oak. "The 2011 Vosne-Romanée Les Beaux Monts is one of the highlights in this range. The 2011 Vosne-Romanee 1er Cru Les Beaux Monts was aged in 75% new oak. The nose is tightly wound and laconic at first, but unfurls to reveal attractive floral scents with hints of bay and tea leaf. The palate is smooth and harmonious on the entry, but those firm tannins came to prominence in the second half, at the back of palate, exerting a gentle grip and a foursquare, dry(ish) finish. Just a little tough at the moment, I would afford this three years in bottle. Drink 2015-2024.

I have been visiting Jeremy and Alec Seysses at Domaine Dujac for several years now, and it is always one of my favorite ports of call. Alec, looking surprisingly chipper for a new dad had taken time off nappy duty to guide me through the 2011s this year. I have to confess that I was concerned by the conspicuous nature of the new oak on both their negociant label wines and the entry Village Crus. I felt that 35% new oak tended to overwhelm the fruit and terroir and occasionally impart drying finishes, which is why my scores are parsimonious here. As I tasted through the range toward the flock of Grand Crus the oak seemed better assimilated, although I would still maintain that the wine is of such quality that the present level of oak risks being superfluous to requirements. All the negociant label wines were bottled before Christmas.

A Focus on Terroir

Founded in the late 1960s by Jacques Seysses, who purchased and renovated Domaine Graillet in Morey-St-Denis. The estate is currently run by Jacques' sons Jeremy and Alec, who farm around 17 hectares of vines across the Côte including holdings in Echezeaux, Clos de la Roche, Charmes-Chambertin and Bonnes Mares.

A natural approach is taken in the vineyard and cellar with the estate moving from organic farming to fully biodynamic in the mid 2000s, receiving their certification in 2011. The team's focus is on elegance - temperatures are controlled to keep alcohol in check and also limit malolactic fermentation while juice from the crush is fed into the cellar by gravity only without the use of pumping. The wines of Domaine Dujac represent pure, balanced expressions of their respective terroirs.
