Established in 1998 by Joaquin Rivero, Bodegas Tradición is one of the newer bodegas in Jerez but has quickly garnered an impressive reputation. The key wines are all VOS or VORS, with core parts of the current Oloroso and Palo Cortado soleras containing wines from the 18th and 19th centuries purchased from Agustin Blazquez and Bodegas Croft.
Palo Cortado is an oenological rarity that combines the complex and elegant nose of an Amontillado with the body and structure of an Oloroso. A beautiful sherry that offers delicious notes of almonds, dried fruits, candid citrus, praline, herbs and leather, it pairs particularly well with classic Spanish fare such as Iberica ham but also works very well with sushi.

Bodegas Tradicion already released a handful of superb bottles of 1975 Oloroso a few years ago, and now it is the Palo Cortado`s turn. These wines are usually blended in a solera system and bottled as non-vintage wines, meaning this 1975 Palo Cortado is a rare single-vintage Palo Cortado. The nose shows a slightly volatile character with some varnish, hazelnut, iron rust and orange marmalade that is followed by a really tasty palate that is quite sharp, denoting an old age and ending with a mineral, chalky, salty sensation. It`s a very concentrated, old Palo Cortado. Only 250 bottles and 50 magnums have been filled.
