Raymond Trollat Saint-Joseph 2005 is a Syrah from the steep granite slopes of Saint-Jean-de-Muzols in the Northern Rhône. This final vintage from the retired Raymond Trollat represents a historical style of winemaking, as the old vines were later passed to the Gonon family. The fruit comes from parcels in the southern zone of the appellation where the granite is particularly solid, providing a distinct mineral foundation. Trollat utilised whole-cluster fermentation in cement vats with indigenous yeasts to encourage aromatic lift and structural grip. Ageing occurred in old, neutral demi-muids for up to 24 months to ensure the granite and fruit characteristics remained at the forefront. The 2005 shows a concentrated profile of candied red fruit, black olives and cracked pepper. It maintains a linear, savoury palate with firm tannins that require several years to soften and reveal the deeper layers of earth and smoke.
