Shafer Hillside Select 1991 is a full-bodied red wine produced from Cabernet Sauvignon grapes in the Napa Valley of California. Shafer`s flagship is one of the most lauded California wines, made entirely from Cabernet Sauvignon from Shafer`s hillside vineyards in the Stags Leap District. "The 1991 Shafer Cabernet Sauvignon Hillside Select represents the beginning of a new era where sterile filtration was halted, after which the quality of most vintages soared to new heights. They may also have been picking riper fruit, as Napa Valley was in the midst of enjoying some fabulous vintages in what would turn out to be a Golden Era for its wineries. The 1991 is the finest Hillside Select of the early 1990s, although the 1992, 1994, 1995, 1997 and 1998 are close in quality. A stunning nose of liquorice, vanillin, unsmoked cigar tobacco, crème de cassis and cedarwood are present in this multilayered, full-bodied, opulent, super-concentrated wine. It still possesses an opaque ruby/purple colour to the rim. At age 23, this beauty is just hitting its plateau of full maturity." Wine Advocate, 2018

Dark, full red. Sexy aromas of plum, mocha, coffee, licorice, leather and mint. Wonderfully silky wine with more texture than most 1991s. The flavors of redcurrant, tobacco and cedar are given energy and definition by strong savory minerality. No easy sweetness here but there's nothing hard or tart about this firm-edged Cabernet, which has the acid/tannin support for further development. An excellent showing. A Family Tradition

An icon of modern winemaking in the Napa Valley, Shafer Vineyards was founded in 1972 by John Shafer, who left a career in publishing to pursue his passion for oenology in California. John and family moved into an estate in Stag's Leap District and began work re-establishing vineyards on the surrounding land. Around five years later, the first Cabernet Sauvignon was produced and it was clear that John had a natural talent for winemaking. Since then, the portfolio has expanded to include Merlot, Syrah and Chardonnay-based wines to name but a few - quality is high across the board and the team pay close attention to preserving varietal character across all bottlings.

John sadly passed away in 2019 and the winery is now managed by his son Doug - a graduate of UC Davis. Doug continues his father's work in partnership with Elias Fernandez, assistant winemaker at Shafer Vineyards. Their flagship wine is Hillside Select, produced using 100% Cabernet Sauvignon and aged for 32 months in new French oak.
