Southing Pinot Noir 2018 is an estate bottling from Sea Smoke Cellars, grown on the south-facing hillsides of their Sta Rita Hills vineyard. This wine is defined by its maritime terroir, where the fog layer slows ripening to preserve acidity and develop intense flavours in the shallow clay soils. The 2018 presents bold dark fruit, menthol and mocha, framed by polished tannins. Winemaking focuses on a monopole approach, using French clones on vigour-reducing rootstocks to produce a wine of significant volume, depth and impeccable balance.
