Gravner Ribolla 2016 is a full-bodied orange wine crafted from Ribolla Gialla grapes, sourced from the Venezia Giulia region in Italy. This wine undergoes fermentation with skins in traditional Georgian qvevris utilising indigenous yeasts, followed by five months of maturation in qvevris off the skins. It is then aged for an additional six years in large oak barrels. Notably, Josko Gravner is renowned for his commitment to ancient winemaking techniques, redefining modern perceptions of vinification in the process.

Spent three to five months in qvevri from Georgia and then aged in big barrels. A portion of between 16 and 20% is aged on skins.Pale orange (less than half the usual sulphites added). Smells of the sort of orange-cream centre in a box of chocolates. Not aggressively chewy. Tangy, salty and dry with a hint of caramel. Went well with sea-bass carpaccio with blood orange and hazelnuts. (JR)
