The Peter Michael Les Pavots 2005 is a single-vineyard red wine from the Peter Michael Winery, a producer known for its careful attention to Bordeaux-style blends. This vintage is composed primarily of Cabernet Sauvignon, accompanied by Cabernet Franc, Merlot and Petit Verdot. Sourced from the estate vineyard atop Mount Saint Helena, the wine is influenced by unique volcanic rhyolite soils and a pronounced elevation, resulting in concentrated fruit. Aged for 18 months in new French oak barrels, the wine presents character notes of blackcurrant, tobacco and a hint of cedar. It showcases structured tannins and balanced acidity, suitable for extended cellaring.

(63% cabernet sauvignon, 23% cabernet franc, 12% merlot and 2% petit verdot) Good deep ruby-red. Deep aromas of currant, raspberry, plum, tobacco, mocha and graphite. Sweet, lush and fat (the pH here is 4.02), with the rich, spicy red fruit flavors complicated by leather, mocha, licorice and cedar. The substantial tannins are smooth and harmonious and arrive late, allowing the subtle finishing flavors of cigar box, mocha and wild dry spices to expand in the mouth. This is 15.1% alcohol but boasts lovely physiological ripeness without any excess weight.Stephen Tanzer1st May 2008

Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.

Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
