In the words of the winemaker, "Near black in color with saturated ruby and vermillion nuances, 2015 Les Pavots reveals a deep bouquet of cacao powder, dried blossoms, dried red fruit, black cherry and currant, blueberry and licorice, with nuances of cigar box, graphite, vanilla and black truffle with a stylish ‘garrigue’ touch. Extremely full-bodied, the palate echoes the nose with the same rich, ripe fruit tones and diverse spice notes. The mouth feel is dense, round and seamless, with supple tannins, savory clove and tobacco elements and beautiful ‘patina’ notes leading to a long finish with subtle mineral accents."

Inspired by the Médoc and Côte d'Or
Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.
Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
