Peter Michael Les Pavots 2012 is a notable red wine from the Peter Michael Winery, situated in Knights Valley, California. This vintage is a Bordeaux-style blend, predominantly featuring Cabernet Sauvignon, accompanied by Cabernet Franc, Merlot, and Petit Verdot. The grapes are sourced from the estate`s vineyard at elevations between 1,000 to 1,400 feet, characterised by volcanic rhyolite soils. The winemaking process involves careful fruit selection, fermentation, and roughly 18 months of ageing in new French oak barrels. The resulting wine displays a complex profile of black fruits, tobacco, cedar, and hints of graphite. Peter Michael Winery was established in 1982, focusing on small-batch, estate-grown wines.
Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.
Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
