Les Pavots is the unapologetically Bordeaux-styled Cabernet Sauvignon-driven blend from legendary producer, Peter Michael Winery. From the highly acclaimed 1996 vintage, this is a wine of wonderful juicy fruit, deep savoury complexity and refined melting tannins. Now with many years bottle age, the deep core of intense black fruit is joined by delicious notes of tobacco, cedar, black truffle and fruitcake spices. This has almost reached its zenith but could well live another decade.
91 Vinous
Perfumed aromas of blueberry, kirsch and framboise, with complicating notes of mint and pencil shavings. Sweet and supple, but firm and penetrating, with sharply defined, intense flavors that are complex but unevolved. Strong acids currently clash with huge tannins. Quite dominated by its structure in the early going, but this very dry wine has the concentration of fruit to benefit from extended bottle aging.Stephen Tanzer1st May 1999

Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.

Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
