The 1994 Les Pavots from Peter Michael Winery is a rare early release produced when now-legendary winemaker, Mark Aubert, headed up the winemaking team. Composed of 70% Cabernet Sauvignon with lesser parts Cabernet Franc and Merlot, this is a deliciously elegant mature wine that perhaps drinks more like Bordeaux now that it has had the benefit of nearly three decades in bottle. Still deeply black-fruited at its core, subtle savoury accents of cigar smoke, truffle, Asian spices and leather provide superb layers of additional complexity. This should drink well for at least another 3-5 years.

Inspired by the Médoc and Côte d'Or

Peter Michael Winery was founded by British businessman Sir Peter Michael in the early 1980s with a singular vision - to make wine in the terroir-driven tradition of Burgundy and Bordeaux, under the California sun and in California soil. The winery currently produce around fifteen wines using four varietals - Cabernet Sauvignon, Pinot Noir, Chardonnay and Sauvignon Blanc.

Consistency and quality are the watchwords here - the wines are clearly inspired by the poise and precision of their Old World counterparts but can't help expressing an edge of Californian excess - ripe fruit abounds on the Chardonnay and Pinot Noir while the Cabernet Sauvignons have a density and concentration that many Bordelais would envy.
