Duty Charges

Below is a summary of the new duty charges per bottle as of February 2026. Please note that these vary depending on the ABV and are subject to change. Please get in touch if you require more information:

Transparent Billing and Rate Calculations

Annual Billing: Clients are invoiced annually based on the wines stored in the preceding year.
Case Equivalents: A case is defined as 9 litres of wine (typically twelve 750ml bottles), ensuring clarity in pricing.
Pro-Rata Charges: Storage fees are charged on a per-bottle basis, and wines stored for part of a month will be billed accordingly.

How to Use Our Bonded Storage

Purchase en primeur or under-bond wines from Hedonism Wines.
Automatically enjoy twelve months of free storage at our bonded storage when you open your storage account.
After twelve months, your storage will continue at the rates outlined above, with quarterly invoicing.
When you are ready to receive your wines, simply request delivery. Most orders are fulfilled within 3-4 working days.

Pavie 2016 is a Right Bank Bordeaux blend from the Saint-Émilion appellation, crafted from 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon. This vintage highlights a significant evolution in winemaking techniques at Château Pavie, with a lower Merlot ratio and reduced maceration time contributing to its profile. Expect heady notes of plum preserve and black cherry, layered with crushed stones, graphite, violets, dark chocolate and exotic spice.

The 2016 Pavie a blend of 60% Merlot and 40% Cabernet Franc. Very deep purple-black in color, it needs a little coaxing to begin, slowly unfurling to reveal a fragrant perfume of violets, chocolate-covered cherries, crushed blueberries and eucalyptus over a core of preserved plums, kirsch, black raspberries and crème de cassis plus hints of licorice and chargrilled meat. Full-bodied and built like a brick house, it has a solid foundation of firm, super ripe, grainy tannins and seamless freshness interknit with the black fruit preserves and minerally layers, finishing very long and very decadent. Deep garnet-purple in color, the 2016 Pavie comes barreling out with bold notes of plum preserves, juicy blueberries, and Morello cherries followed by hints of Indian spices, dark chocolate, dusty soil, and iron ore. The full-bodied palate is jam packed with youthful black fruit preserves and spicy sparks, framed by firm, velvety tannins and amazing tension, finishing long and perfumed. This is still so young, it has hardly budged since bottling. Give it a good 6 years in bottle and drink over the next 50 years+.Lisa Perrotti-Brown13th December 2023

Approaching the 10 years moment, but still showing a closed face to the tannins, barely emerging from its primary phase. Both Cabernet Franc and Cabernet Sauvignon were increasing in the vineyard at this point (with the lowest amount of Merlot since Perse arrived), bringing with them not just black fruits but a clear emphasis on floral aromatics - violets and lavender in particular. This is hugely concentrated, with layer upon layer of blueberries, chocolate shavings and bitter espresso, but at this point the team had begun to take the foot off the pedal in the vineyard, gently raising the yield, bringing down the maceration time, going towards infusion rather than punching down as a means of extraction. Think purity, nuance and a blast of eucalyptus and mint on the finish, this has a fine life ahead of it. The 2016 Pavie is powerful and rich on the nose, and more decadent than the 2016 Angélus, featuring iodine-tinged blackberry and blueberry fruit and noticeable new oak, all lavish and sensual. The palate is medium-bodied with saturated tannins, and fleshy to the point where it masks the backbone underneath. It feels hedonistic on the finish but retains control with a wonderful spiciness that lingers on the aftertaste. Superb. Tasted blind at the annual Southwold tasting. Neal Martin1st August 2020

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
