Château Pavie 2015 is a notable red wine from the Saint-Émilion appellation, classified as Premier Grand Cru Classé A. The blend comprises a majority portion of Merlot, alongside Cabernet Franc and Cabernet Sauvignon. The 2015 vintage benefited from a hot summer, yielding ripe and concentrated grapes. Under Gérard Perse`s direction, the wine undergoes a rigorous production process, including low yields and extensive aging in new French oak. This vintage is distinguished by its dense structure and firm tannins, with a complex profile reflecting its terroir.

In 2015, the blend is 60% Merlot, 22% Cabernet Franc and 18% Cabernet Sauvignon, and the wine was matured 80% in new French oak. Deep garnet-purple in color, the 2015 Pavie is still sporting a bit of its oak to begin, giving way to a glorious nose of crushed black cherries, blackberries and mulberries plus hints of dried roses, stewed tea, unsmoked cigars and garrigue. The rich, concentrated, full-bodied palate delivers an incredible structure of very firm, very ripe tannins and a racy line of freshness cutting through the dense layers of perfumed black fruits and savory notions, finishing with epic length. - Lisa Perrotti-Brown
98 The Wine Independent
Opaque garnet in color with a touch of purple, the 2015 Pavie needs a fair bit of swirling to unlock notes of baked plums, blackberry preserves, and spice cake followed by nuances of tree bark, charcoal, and tapenade with a touch of Indian spices. The full-on, full-bodied palate is atomic, exploding in the mouth with black fruit preserves and velvety tannins, kept in check by a racy backbone, finishing with epically long-lasting notes of exotic spices. It needs 5 years to come into its best, then drink over the next 25 years+.Lisa Perrotti-Brown13th December 2023

Richly textured with luscious autumnal fruits, ripe and welcoming, and layered with fragrant spice. Love the depth of the black fruits, and this has grown into its excellence as the terroir begins to fully override the exuberance of its early years. Great stuff. 80% new oak.Jane Anson19th February 2025

The 2015 Pavie has a very generous and outgoing bouquet that seems a bit riper than its peers. Touches of raisin and prune percolate through the red fruit. The palate is fleshy, plush and framed by saturated tannins. This is a luxurious, almost Napa-like Right Bank with a decadent, Merlot-driven finish. Tasted blind at the 2015 Bordeaux Ten-Year-On tasting. Neal Martin3rd June 2025

Very deep blackish crimson. Quite a luscious nose. But veering towards oxidation. Heavily extracted. With lots of alcohol on the persistent finish. (JR)

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
