Château Pavie 1988 is a red wine hailing from the Saint-Émilion appellation on Bordeaux`s Right Bank. This vintage emerged prior to Gérard Perse`s stewardship, during a period when the estate was well regarded for its traditional winemaking approach. Typically dominated by Merlot, the blend also incorporates Cabernet Franc and a minor proportion of Cabernet Sauvignon. The 1988 vintage is noted for its cooler growing season, yielding wines with notable acidity and a refined fruit character. This bottle exhibits matured aromas of dried fruits, leather and earthy elements, alongside a medium-bodied palate and resolved tannins.

The 1988 Pavie is a vintage I have met a couple of times before, this predating Gérard Perse’s acquisition in 1997. It has an attractive old school nose of light black fruit, roof tiles and cedar; a little diffuse but still fresh. The palate is medium-bodied with a tart cherry entry, wild mushroom and sandalwood. It lacks some depth on the finish but it is still perfectly drinkable, if missing a bit of excitement after 30 years. Tasted at the château. Neal Martin1st May 2018

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
