Château Pavie, encompassing 37 hectares, is positioned to the east of Saint-Émilion town on the southern fringe of the famous plateau. Its vineyards benefit from a prime location, occupying the limestone bedrock of the plateau and a south-facing slope, providing efficient drainage and optimal sun exposure. The 1983 vintage of Château Pavie reveals a matured Claret characterized by a tertiary profile that includes notes of tobacco, caramel, and dark and dried fruits. The palate offers a savoury experience, exhibiting softness with subtle hints of prune.

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
