Château Pavie 1982 is a Saint-Émilion Grand Cru Classé blend composed of 65% Merlot, 25% Cabernet Franc and 10% Cabernet Sauvignon from a legendary year for Bordeaux. This bottling represents the estate`s pre-modern era under the Valette family, characterised by a more traditional, less extracted style than the post-1998 wines. On the palate, the 1982 displays a tertiary complexity of cedar, truffle and sweet red fruit, supported by a resolved yet firm structural spine. Despite the heat of the vintage, the wine retains a remarkable freshness that has allowed it to age with immense grace over four decades.

The 1982 Pavie is a wine that I tasted just over a year ago. This example has that rustic nose, perhaps burdened with more Brettanomyces than the previous one, light minty scents mixed with pencil shavings emerging after five minutes. The palate is medium-bodied with coarse tannins, this bottle slightly acetic, stumbling toward a rather dilute and, here, animally finish. Drink up. Very, very deep, blackish crimson. Dusty. Scented. Correct. Gentle, but quite a bit of vigorous tannins at the end. Quite surprisingly chewy. (JR)

A Decadent St-Emilion

Situated to the south-east of the town of St-Emilion, Pavis is the largest 1er Grand Cru Classé property in the commune with over 35 hectares of vines. The vineyards themselves are ideally situated on the south facing slopes of a limestone plateau for excellent exposure, ensuring optimal ripeness in the right conditions. Since the late 1990s, the Grand Vin has been a blend of 55% Merlot, 25% Cabernet France and 20% Cabernet Sauvignon, fermented in wooden vats and aged in 100% new oak for 18 months. The wines are bottled unfiltered for added concentration and texture.

Pavie was purchased in 1998 by Gérard Perse who has, assisted by consultant oenologist Michel Rolland, pushed the wines towards a bolder, more concentrated style with a focus on concentrated fruit on the palate and an expressive nose.
