The Cuvée Cherie Demi-Sec is a multi-vintage 100% Chardonnay from West Sussex and Hampshire containing 38g/L residual sugar. Readers in the US should note that this is exactly the same as the Demi-Sec, which previous bottles were labeled, without vineyard designation. It has a well-defined, brioche-tinged bouquet that demonstrates more reserve than expected, light almond scents mixing with honey and lemon thyme. The palate offers dried honey, tangerine, hints of pink grapefruit and a dab of sour lemon than neatly counterbalances the not-excessive sweetness on the finish. Fine.

Brioche and baked apple on the nose and palate – the dosage really helps sweeten the flavour profile but without giving overt sugar on the finish. In fact, it still seems reasonably savoury, thanks to high acidity. This style works really well for English fizz. (RH)

Having planted its first vines in West Sussex in 1988, Nyetimber was one of the forerunners of the fine English sparkling wine boom, producing traditional method sparkling wines from estate-grown Chardonnay, Pinot Noir and Pinot Meunier grapes.

Based in the village of West Chiltington in a lea of the South Downs, Nyetimber owns vineyards in West Sussex, Hampshire and Kent, where the geology and soils – principally the same chalk seam which runs under Champagne, along with greensand – are particularly suited to producing world-class sparkling wines.

Head winemaker Cherie Spriggs and her winemaker husband Brad Greatrix work with meticulous attention to detail in the vineyards to ensure optimum fruit quality, while in the cellar, extended ageing and the benefit of an extensive collection of reserve wines ensures that each bottle leaving the winery displays a complexity and finesse which makes Nyetimber a benchmark producer of English sparkling wine.
