Domaine Dujac Morey St Denis 2005 is a medium-bodied Burgundy red wine from the Morey St Denis appellation of the Côte de Nuits. Jacques Seysses and his wife Rosalind founded Domaine Dujac in 1968, with a clear vision of crafting wines of exceptional character and finesse. Since then, the estate has acquired prized vineyard parcels in renowned appellations such as Gevrey-Chambertin, Vosne-Romanée, and Morey-Saint-Denis, from which this particular release originates. While this wine represents the entry point to the Domaine`s range as a village-level offering, it remains true to the distinguished quality and distinctive character that Domaine Dujac is renowned for. "I am always a little bit apprehensive opening up a 2005 red Burgundy so early in its potential life, though maybe we can just begin to look at some village wines. I am very fond of Morey-Saint-Denis anyway, but Dujac’s village version always plays well above its station. The bouquet is wonderfully welcoming, the palate says OK, but don’t be in such a hurry. The whole bunch vinification offers a spicy touch, but in a year like 2005 it only offers a minor key alongside the concentration of delicious dark fruit, which made a great match with a dish of slow cooked pork ribs assisted by a little rosemary, thyme and (rather more) garlic." Bright, deep red-ruby. Briary black raspberry, smoke and mocha on the musky nose. Dense, musky and sweet, with a hint of malic acidity giving an edge to the black raspberry, mineral and chocolate flavors. Finishes with substantial dusty tannins. This cuvee got a total of just two pigeages, as the fruit needed a gentle extraction owing to some drought stress, according to Jeremy Seysses.Stephen Tanzer1st March 2007

A Focus on Terroir
Founded in the late 1960s by Jacques Seysses, who purchased and renovated Domaine Graillet in Morey-St-Denis. The estate is currently run by Jacques' sons Jeremy and Alec, who farm around 17 hectares of vines across the Côte including holdings in Echezeaux, Clos de la Roche, Charmes-Chambertin and Bonnes Mares.
A natural approach is taken in the vineyard and cellar with the estate moving from organic farming to fully biodynamic in the mid 2000s, receiving their certification in 2011. The team's focus is on elegance - temperatures are controlled to keep alcohol in check and also limit malolactic fermentation while juice from the crush is fed into the cellar by gravity only without the use of pumping. The wines of Domaine Dujac represent pure, balanced expressions of their respective terroirs.
