La Bota No 124 Fino Un fino que va para Amontillado Navazos reveals a pale straw color, with a pronounced aroma of almonds and sea breeze. The palate is dry, featuring elements of green olives and hints of citrus peel. There’s a subtle nuttiness that develops, typical of the biological aging process before the wine transitions toward the qualities of an Amontillado. The finish is crisp, leaving a lingering salinity that invites another sip.
This unique expression originates from select old soleras in Jerez, demonstrating the delicate balance between fino and amontillado styles. La Bota No 124 is crafted by the Navazos team, known for sourcing exceptional casks. The wine is bottled without filtration or stabilization, preserving its raw character and complexity, appealing to both traditionalists and modern enthusiasts in the world of Sherry.

Similar to La Bota de Fino 85 from October 2018, the NV La Bota de Fino 124 Un Fino que va para Amontillado… is from Montilla-Moriles and produced with Pedro Ximénez grapes. This wine, from the same origin as edition 24, 45 and 85, would be called Fino Amontillado if it wasn`t forbidden. They have taken biological aging under flor to an extreme, close to 15 years, and the wine was never fortified. The grapes were close to 15% alcohol, and the alcohol level increased to 16.5% through evaporation and concentration. It has power and great finesse, a textbook Fino nose with a volatile touch that gives it complexity and lifts up the wine. It has finesse, it`s getting complex and it`s getting polished by the time in bottle. It has pungent flavors, notes of esparto, hazelnuts and varnish, and a touch of bitterness in the finish. 2,800 bottles were filled in 2023.
