Domaine Dujac`s Aux Combottes is a highly coveted Premier Cru from Gevrey-Chambertin, uniquely surrounded by Grand Cru sites, embodying the essence of the Dujac house style. The 2017 vintage delivers a bright, highly aromatic, and juicy profile, classic of the cooler year, expressing sappy red cherries, wild raspberries, orange peel and underlying baking spice. The wine is defined by its elegance and effortless drinkability, showcasing a silky texture, fine balance, and a persistent, lifted finish that hides the vineyard`s inherent power.

The 2016 Gevrey-Chambertin Aux Combottes 1er Cru has an attractive bouquet with plenty of red berry fruit, raspberry and crushed strawberry. There is an animally note implying a touch of brettanomyces, though not to the degree that concerns me. The palate is medium-bodied with firm tannin, slightly lactic in texture that rather degrades the smooth but rather smudged finish. Maybe a little too much winemaking here but it might pull through with bottle age. Tasted blind at the 2016 Burgfest tasting. Neal Martin1st October 2019

A Focus on Terroir

Founded in the late 1960s by Jacques Seysses, who purchased and renovated Domaine Graillet in Morey-St-Denis. The estate is currently run by Jacques' sons Jeremy and Alec, who farm around 17 hectares of vines across the Côte including holdings in Echezeaux, Clos de la Roche, Charmes-Chambertin and Bonnes Mares.

A natural approach is taken in the vineyard and cellar with the estate moving from organic farming to fully biodynamic in the mid 2000s, receiving their certification in 2011. The team's focus is on elegance - temperatures are controlled to keep alcohol in check and also limit malolactic fermentation while juice from the crush is fed into the cellar by gravity only without the use of pumping. The wines of Domaine Dujac represent pure, balanced expressions of their respective terroirs.
