Domaine Dujac Gevrey-Chambertin Aux Combottes 2005 is a medium- to full-bodied Burgundy red wine from the Premier Cru climat of Aux Combottes in the Gevrey-Chambertin commune of the Côte de Nuits. Established in 1968 by Jacques Seysses, Domaine Dujac is undoubtedly one of Burgundy’s finest wine producers. The estate is now run by Jacques’ two sons, Jérémy and Alec, and his daughter-in-law Diana. This particular cuvée comes from Les Combottes, a lieu-dit south of the village of Gevrey-Chambertin where Dujac owns a 1.5-hectare plot. "The 2005 Dujac Combottes is stellar, and a hair better than the domaine’s Chambolle-Musigny `Gruenchers` this year. The bouquet is deep, polished and strikingly pure, as it wafts from the glass in a blend of blood orange, cherry, bitter chocolate, mustard seed, just a touch of game, cocoa powder, complex soil tones and a judicious framing of vanillin oak. On the palate the wine is fullish, deep and intensely flavoured, with laser-like focus, refined tannins, excellent acidity, and a very long, very pure finish. This is a very, very fine bottle in 2005, but this is one vintage of Dujac Combottes that I would be inclined to leave alone in the cellar for a good decade before pulling a cork, as the structural style of the 2005 vintage is likely to give this a relatively stern (and uncharacteristic for Combottes) adolescence." Good deep, bright red. Liqueur-like aromas of maraschino cherry, mint and soy sauce. Suave on entry, then tangy in the middle palate, offering complex flavors of red fruits, spices and mint. Finishes with a serious tannic spine that gives this wine a youthful austerity. I find a captivating savory character reminiscent of mushroom umami from the nose straight through to the aftertaste. Lay this one down for at least six or seven years.

Pale rim, scented and delicate for a Gevrey – but such direct fruit flavours! Only then does the structure start to insinuate itself and demonstrate that in fact it offers a bit of a corset – even slightly inky on the finish. (JR)

A Focus on Terroir
Founded in the late 1960s by Jacques Seysses, who purchased and renovated Domaine Graillet in Morey-St-Denis. The estate is currently run by Jacques' sons Jeremy and Alec, who farm around 17 hectares of vines across the Côte including holdings in Echezeaux, Clos de la Roche, Charmes-Chambertin and Bonnes Mares.
A natural approach is taken in the vineyard and cellar with the estate moving from organic farming to fully biodynamic in the mid 2000s, receiving their certification in 2011. The team's focus is on elegance - temperatures are controlled to keep alcohol in check and also limit malolactic fermentation while juice from the crush is fed into the cellar by gravity only without the use of pumping. The wines of Domaine Dujac represent pure, balanced expressions of their respective terroirs.
