Fernando de Castilla Fino en Rama is a fino Sherry from the Jerez region of Spain. Bodegas Rey Fernando de Castillo was founded in the 1960s but was purchased and revamped in 1999 to become one of the most interesting and highest quality bodegas in the Jerez DO. En Rama indicates that this fino was unfiltered – offering greater complexity and texture than would otherwise be possible. This is a benchmark fino en rama with apple, chamomile, almond and yeast aromas, followed by nutty, savoury notes on the palate and a salty tang on the finish. Try with salted almonds or Iberico ham.

I tasted a briny half bottle of the recent release of the NV Fino en Rama that was bottled in March 2019, a few weeks before I found it. It`s a classical, intense golden colored Fino with a bone-dry palate, chalky texture and seaweedy finish. It had a soft palate, with moderate tension. 3,600 half bottles produced.

Pale gold. Bottled December 2015. Next bottling due May 2016.As briney as their Classic Manzanilla but more pungent. Smells of seashells and something like heather honey though of course it is bone dry. Dusty/musty in a good way (ie nothing to do with TCA). Creamy and deep on the palate but still zestily dry. Long yeasty finish. Very good. Flavour goes on and on. (JH)
