Ermitage Le Pavillon Chapoutier 1999 is a single-site Syrah from vines aged 90-100 years. Hand-harvested grapes ensure precise selection at peak over-maturity, resulting in low yields that emphasise quality. The vineyard spans approximately 4 hectares, characterised by granitic subsoil and sedimentary layers, which contribute to the wine`s complexity. Fermentation occurs in concrete tanks, with daily treadings to enhance extraction, while maceration extends for 4 to 5 weeks. This magnum was aged for 18 to 20 months in oak. An exceptional bottling of Le Pavillon.

Full medium ruby. Classic Hermitage aromas of dark berries and gunflint, with a suggestion of bitter chocolate. Concentrated, sweet and expansive, with inky and minerally components suggestive of the granite soil. Finishes with impressively ripe fruit flavor and huge, spreading tannins that take over the palate. From a crop level just under 30 hectoliters per hectare.Stephen Tanzer1st January 2002

One of the oldest producers in the Rhône Valley, M. Chapoutier was established in 1808. The arrival of a young Michel Chapoutier, who took over management of the family domaine in 1990, saw huge changes and a renewed drive for excellence, focussing especially on the diverse terroir of the Rhône. Michel has embraced biodynamic practices in recent years and attributes much of the increase in quality to this approach. The wines are generous and fruit-forward at the entry level, moving towards the sublime as we move up the quality ladder.

Two of the greatest wines in the portfolio are 'De L'Orée', an Hermitage Blanc made from 100% Marsanne and 'Le Pavillon', a full-bodied, expressive Hermitage rouge that effortlessly rubs shoulders with the world's greatest Syrah.
