El Cerro de Valdecanada Raúl Pérez 2018 is a single-vineyard wine of Bierzo, primarily crafted from the Mencía grape, along with contributions from Godello and other local varieties. The fruit is sourced from a small, elevated vineyard in Valdecanada, situated approximately 800m above sea level. The grapes undergo spontaneous fermentation in neutral vessels, with a significant emphasis on wholebunch fermentation. Following fermentation, the wine is macerated for six months, then aged in used French oak barrels for around 12 months.
