A sumptuous fortified wine that forms part of Gonzalez Byass` Palmas range of old rare sherries. On the nose, creamy butterscotch and well integrated oak followed by crisp acidity, toasted nuts and yeasty complexity on the palate, concluding on a bone dry finish.

Very fine in character, the NV Fino Dos Palmas 2014 release averages eight years of biological aging under flor which gives it a finer character, as yeasts eats glycerin and make the wines sharper. This is a very perfumed, elegant wine with notes of white flowers, esparto grass, fine brine and chalky, earthy notes. The palate is subtle with marked chalky minerality and pungent, precise flavors. 2,000 half-bottles were filled. The price given in for half bottle. - Luis Gutiérrez

Full 50-cl bottle 1,062 g. Tio Pepe cellar masters have used the `palma` chalk marks to indicate barrels of exceptional quality. The more palmas, the greater the maturity of the barrel. Does Palmas is a selection of a small number of Tio Pepe barrels which were aged longer than the Una Palma barrels and also under thick flor. Bottled 20 October 2022, unfiltered and unclarified.A distinctly honeyed tone to the gold colour of this wine. A little catch of cheesy ammonia on the nose and then the smell of freshly baked cheese-and-oat biscuits. As the wine warms, green apple. Bitter cider apple gives the palate a crunchy feel; a thicker, savoury swirl of tahini and yeast flakes broadens the structure and finish of the wine. Masses of flor-formed bite and chew. There`s real punch and vigour in every sip. Hop flowers. Subtle threads of smoke and campfire ash through grilled grapefruit peel. Silky finish. (TC)
