Château de Pez is a leading Saint-Estèphe estate, part of the Rouzaud stable (who own Louis Roederer & Pichon Lalande) making Cabernet-led wines with real substance. The 1995 vintage is now fully mature. expect a garnet colour with some browning at the rim, and a bouquet of cedar, dried cherry, tobacco and a touch of chocolate. The palate is savoury and firm rather than fruity, with fine acidity and a spicy, gently drying finish. Drink now with roast lamb or mature hard cheese; further keeping is not recommended.

The new owners, the Roederer Champagne firm, have obtained more richness, fruit, and concentration in this northern Medoc cru bourgeois estate. The 1995 possesses excellent color, a sweet, jammy, blackcurrant aroma, a monolithic but well-proportioned and concentrated feel on the palate, low acidity, and mature tannin in the finish. This tasty, mouthfilling St.-Estephe should drink well when released and last for a decade. - Robert M. Parker, Jr.
