Dassai Blue 50 is bottled in three distinct expressions to showcase not only the versatility of the rice but also the exceptional craftsmanship involved in every bottle of Dassai Blue. This edition is the pasteurised version.

Licorice and cantaloupe lead into flavours of pineapple candy, lemon curd, and vanilla, with a subtle hint of brine on the finish.

In Search of Perfection

Dassai is a brand produced by the Asahi Shuzo brewery. Literally meaning "otter festival" the name is a reference to the many otters that populate the rivers of Yamaguchi Prefecture, where the brewery is based. One of the world's most famous premium sake brands, Dassai are continually pushing boundaries to create unique and interesting bottlings that bridge the gap between traditional sake and the world of fine wine.

The numbers that feature on the front labels of many Dassai sakes refer to the polishing ratio of the rice used in the brew. Lower numbers represent a more intensive polish, which results in a cleaner, more elegant style of sake, while higher numbers result in a more robust, full flavoured brew.
