Soul of a Lion is the crown jewel of DAOU Vineyards and is a Cabernet Sauvignon-driven red from the terroir of the DAOU mountain. Distinctly aromatic with scents of forest floor, black tea, cassis, dark chocolate and dried flowers. On the palate it is all class with a silken mouthfeel and great elegance. The masterwork of Winemaker Daniel Daou, who combines technical innovation with the touch of an artist. Sold in glorious large format.

Dark purple. Intensely perfumed dark berry liqueur, exotic spice, incense, floral and licorice aromas show outstanding clarity and pick up hints of espresso and vanilla with air. Deeply concentrated, mineral-tinged cassis, blueberry, violet pastille and bitter chocolate flavors become livelier and take on a smoky nuance as the wine stretches out. Broad and youthfully chewy in texture, showing firm tension, impressive floral-dominated persistence and dusty tannins that lend solid closing grip. All new French oak.Josh Raynolds7th July 2022

If you are a Cabernet Sauvignon fan, it is hard to go wrong with this wine. Broad-shouldered and inky without a doubt, but the tannins will relax over the next few years and are already provide a great sounding board for the vibrant blueberry and cassis fruit. You get a blast of sweet cedar on the opening notes, with cocoa beans, a ton of liquorice, pencil lead and scorched earth, and a fragrant sage finish that adds delicacy and balance, making it really important to give time in the glass for this aspect to become clear. One of the longest seasons on record at Daou after a relatively cool end of season, and the last grapes came in during the third week of October. 100% new oak.Jane Anson6th October 2021

Innovators in Paso Robles

Founders George and Daniel Daou began searching for the vineyards that would comprise the DAOU estate in the mid 2000s - their objective was to find the perfect terroir for producing world-class Cabernet Sauvignon. They eventually settled on an estate in the Adelaida District AVA in San Luis Obispo County, specifically a plot once singled out by oenologist André Tchelistcheff as being of great potential.

It's rare to find high quality Cabernet Sauvginon in Paso Robles, rare even to find anyone vinifying the grape here, but the high altitude of the site combined with a forensic approach in the vineyard and winery have allowed the team at DAOU to produce some truly fantastic wines. The flagship Cabernet Sauvignons are dense, intense reds that are set to age for many decades. Mayote is a Cabernet Sauvignon / Syrah blend while the estate Chardonnay is a surprisingly elegant entry in the portfolio.
