The Dalmore 1981 Amoroso Sherry was distilled in November 1981 by master distiller Richard Paterson. It was then matured in American white oak barrels for 26 years, followed by a short but intense period in Amoroso sherry casks. The resulting whisky combines crushed almonds, citrus fruits and berries, with hints of cherries, plums and mandarin. The extra period in Amoroso sherry wood has added complexity and a spicy character to this remarkable single malt.

Founded in 1839 by Alexander Matheson, Dalmore is one of the Highland's most recognisable distilleries. Overlooking the Cromarty Firth, the distillery houses four pairs of stills and produces just over four millions litres of spirit a year.
