Domaine Courbis Cornas La Sabarotte 2005 is a powerful Northern Rhône Syrah from a steep, granite-soiled vineyard with a southern exposure. The 2005 vintage was exceptional for Cornas, producing wines of immense structure and dark, brooding fruit. This bottling is characterized by its aromatics of bacon fat, black olives and crushed peppercorns, underpinned by a firm mineral backbone. It represents a muscular style of Syrah that requires significant bottle age to soften its formidable tannins and reveal its intricate, earthy layers.

Inky ruby. Powerful dark berry aromas offer compelling depth, with suave oak spice and minerals adding a seductive quality. Strikingly sweet, with broad dark berry liqueur flavors complemented by exotic violet pastille and candied licorice. Finishes with superb focus, with no loose ends or rough edges. This should go straight into the cellar.Josh Raynolds1st January 2008

The safest bet is the 2005 Cornas La Sabarotte. Its dense purple color is accompanied by notes of gamey meat, roasted herbs, blackberries, and asphalt. Give it 2-3 years of cellaring, and drink it over the following 10-12. - Robert M. Parker, Jr.
