Climens 1988 is a mature sweet wine from the Sauternes appellation of Bordeaux. Château Climens is a Premier Cru Classé Sauternes producer and one of the leading producers of sweet wine in Bordeaux. Produced from 100% Semillon from vineyards in the Barsac appellation, Climens Sauternes is fermented in barrel and aged in barriques (30% new) for 22 months. Renowned for its elegance, finesse and profound longevity (good vintages can age well for comfortably more than 50 years), Château Climens pairs spectacularly well with Roquefort-type cheeses and foie gras. Maturer vintages complement rich but more savoury foods, including spicy Asian dishes. "The 1988 Climens has a focused bouquet with lovely orange pith, quince, wet wool and showing a very light sea spray influence. The palate is well balanced with fine delineation, not quite as deep as the 1989. A more feminine and elegant Climens with a poised and quite persistent finish that just fades a little. Very fine.
