Jean-Marc Pillot is a fifth-generation winemaker producing a fine array of red and white wines from 11 hectares of meticulously tended vines based mostly in the commune of Chassagne-Montrachet. Though impeccably balanced overall, the 2016 is perhaps a little more angular in feel than the 2015 and will possibly need a little longer in bottle.

Vinous
Pale, bright yellow. Ineffable scents of lemon zest, powdered stone and white pepper. Tactile, citrussy and classically dry, displaying wonderful inner-mouth floral lift and conveying an utterly weightless impression. But not quite as silky today as the Clos Saint-Marc and distinctly saltier. Finishes with outstanding rising length. This very tight, unevolved Chevalier-Montrachet may well require even more patience than the Clos Saint-Marc. Pillot bottled just a single one-year-old barrel of this juice.Stephen Tanzer1st September 2018
