Echezeaux Les Rouges du Bas Meo Camuzet 2010 is produced from a small parcel of 50+ year old vines. This specific parcel, `Les Rouges du Bas`, is situated towards the lower, flatter, and often richer part of the Echezeaux Grand Cru appellation, lending itself to wines that possess considerable depth and concentration. Méo-Camuzet, under the meticulous guidance of Jean-Nicolas Méo (who famously benefited from the tutelage of the legendary Henri Jayer), farms this plot with great care, focusing on low yields and expressing the unique nuances of this lieu-dit. The resulting wine typically showcases a generous, ripe fruit profile balanced by pronounced acidity, which provides freshness and structure, allowing it to develop beautiful complexity and a sometimes austere, yet refined, finish after several years of ageing.
The 2018 Chassagne-Montrachet Grandes Ruchottes 1er Cru had a heavy reduction at first, although it seemed easy to shift. Underneath lies plenty of citrus fruit, orange pith, beeswax and lanolin aromas all defined and focused. The palate is well-defined with a fine bead of acidity, quite spicy and tensile. Currently with siblings Thierry and Chrystelle Pillot at the helm, Domaine Paul Pillot has swiftly risen to become of the most highly regarded producers in Chassagne - producing superb wines not only from the commune of Chassagne-Montrachet, but also St Aubin and Santenay.
Viticulture is practiced along organic lines, although the domaine is not yet certified. The team in the cellar shy away from new oak, using only around 10% when maturing their wines and preferring larger format barrels for a more moderated influence. This is low-intervention winemaking and the watchword here is poise - grapes are picked earlier rather than later and the wines are elegant and fruit-forward, clean and precise.
