Domaine Paul Pillot, established in 1900 by Jean-Baptiste Pillot, a barrel maker by trade, who decided to focus full-time on his vines, is esteemed for its elegant and age-worthy wines. Today the estate is run by Thierry Pillot, who has brought the estate forward with both technological and sustainability advances. In the 2017 vintage, Paul Pillot`s Les Caillerets presents a bouquet of white peach, citrus zest, and subtle floral notes. The palate is refined, with a lively acidity and a stony minerality, culminating in a precise, lingering finish. This wine exemplifies the finesse and purity associated with Pillot`s winemaking.

- The 2017 Chassagne-Montrachet Les Caillerets 1er Cru sports a very slight reduction on the nose, although nothing serious. Crisp and precise, it offers orange pith and freshly sliced pear and a touch of smoke. The palate is also reduced on the entry, delivering good density and weight, and a little chewy in texture. The finish is initially a little subdued, yet it meliorates dramatically with aeration and musters wonderful clarity. Tasted blind at the annual Burgfest tasting in Savigny-lès-Beaune.

Currently with siblings Thierry and Chrystelle Pillot at the helm, Domaine Paul Pillot has swiftly risen to become of the most highly regarded producers in Chassagne - producing superb wines not only from the commune of Chassagne-Montrachet, but also St Aubin and Santenay.

Viticulture is practiced along organic lines, although the domaine is not yet certified. The team in the cellar shy away from new oak, using only around 10% when maturing their wines and preferring larger format barrels for a more moderated influence. This is low-intervention winemaking and the watchword here is poise - grapes are picked earlier rather than later and the wines are elegant and fruit-forward, clean and precise.
