Paul Pillot Chassagne-Montrachet Les Caillerets 2015 is a 1er Cru Burgundy Chardonnay from the climat of Les Caillerets in the appellation of Chassagne in the Côte de Beaune. Originally founded in 1900, Domaine Paul Pillot is one of the finest Burgundy producers in Chassagne-Montrachet. The estate is currently led by the siblings Thierry and Chrystelle Pillot, two of the most talented winemakers in the region. "Domaine Paul Pillot, today one of the finest addresses in the Côte de Beaune, has been directed since 2004 by the young and dynamic Thierry Pillot. Characterful, elegantly textural and mouthwateringly incisive, these are superb white Burgundies…readers shouldn’t hesitate to buy whatever bottles they can find.” William Kelley, Wine Advocate

Tasted blind, this was also a very strong showing for Pillot`s 2015 Chassagne-Montrachet 1er Cru Les Caillerets. Aromas of lemon oil, mandarin and nutmeg mingle with hints of petrol and crushed chalk in a complex bouquet, introducing a medium-bodied, tense and stony wine with racy acids and a mouthwatering, unmistakably stony finish.

The 2015 Chassagne-Montrachet Les Caillerets 1er Cru mutates in the glass, some initial blowsiness rapidly dissipating to reveal lovely yellow stone fruit and minerals. The oak is nicely enmeshed here. The palate initially has a lot of reduction, although this soon disappears to reveal a beautifully balanced wine with a long, mineral-driven finish. I was glad I revisited this wine after ten minutes, so decanting is advised. Tasted blind at the annual Burgfest tasting.

More stony than the straight Chassagne. Then, like the village wine, spreads across the palate in creamy depth. Intense with lots of tension and tight promise. (JH)

Rising Stars

Currently with siblings Thierry and Chrystelle Pillot at the helm, Domaine Paul Pillot has swiftly risen to become of the most highly regarded producers in Chassagne - producing superb wines not only from the commune of Chassagne-Montrachet, but also St Aubin and Santenay.

Viticulture is practiced along organic lines, although the domaine is not yet certified. The team in the cellar shy away from new oak, using only around 10% when maturing their wines and preferring larger format barrels for a more moderated influence. This is low-intervention winemaking and the watchword here is poise - grapes are picked earlier rather than later and the wines are elegant and fruit-forward, clean and precise.
