Domaine Paul Pillot, established in 1900 by Jean-Baptiste Pillot, a barrel maker by trade, who decided to focus full-time on his vines, is esteemed for its elegant and age-worthy wines. Today the estate is run by Thierry Pillot. The 1996 vintage from Paul Pillot`s La Romanée vineyard offers aromas of mature citrus, toasted almond, and a hint of truffle. The Chassagne-Montrachet La Romanee is a wonderful wine. Smoke and minerals can be discerned on its nose, followed by a wide, fat, medium-to-full-bodied core of buttery stones, currants, sweet oak, and pears. Complex, concentrated, extremely well-balanced and defined, this wine`s mid-palate is as rich and full-flavored as its attack and finish. Anticipated maturity. 2001-2008.

Currently with siblings Thierry and Chrystelle Pillot at the helm, Domaine Paul Pillot has swiftly risen to become of the most highly regarded producers in Chassagne - producing superb wines not only from the commune of Chassagne-Montrachet, but also St Aubin and Santenay.

Viticulture is practiced along organic lines, although the domaine is not yet certified. The team in the cellar shy away from new oak, using only around 10% when maturing their wines and preferring larger format barrels for a more moderated influence. This is low-intervention winemaking and the watchword here is poise - grapes are picked earlier rather than later and the wines are elegant and fruit-forward, clean and precise.
