Domaine Ramonet Chassagne-Montrachet Boudriotte 1997 is a mature 1er Cru white Burgundy from one of the most renowned Chardonnay domaines in the Côte de Beaune. The Chardonnays of Domaine Ramonet are true benchmarks of Burgundy terroir. Fermentations are carried out without much settling of the solids, while new oak is kept to a minimum. The resulting wines are pure, dense and complex, unveiling themselves slowly. Founded in the 1920s by Pierre Ramonet, the domaine is now managed by third-generation proprietors Noël and Jean-Claude Ramonet. "Pure aromas of pear, white flowers and minerals, plus a subtle hint of oak spice (in comparison to this wine, the Morgeot is downright dull). Fresh and lively in the mouth, with harmonious acids and fruit-driven flavours of tangerine, pineapple and peach. Nicely delineated. Finishes with good minerally austerity.
